INGREDIENTS


50g green beans
50g cabbage
1 tomato diced
50g leeks
50g carrots
2 cloves of garlic chopped
50g red dhal
2 small potatoes cubed
2 cardamoms
1 sprig curry leaves
1 piece of lemongrass
1 tsp raw curry powder
1 piece cinnamon
1 tbs crushed black pepper
1 tbs tamarind paste
8 cups water
Salt to taste

Red Iced Tea

Red Iced Tea

















A cooling drink with few calories and no caffeine!

5 bags of Tetley Red tea
3-5 TBS Sugar
Juice of a Lemon
Juice of an Orange
boiling water
Iced water
Ice cubes 
Lemon slices & Orange slices for garnish (optional)

Pour 3/4 cup to a cup of boiling water on to tea bags and let steep for about 3 minutes, do not disturb tea bags or steep for too long to avoid the tea becoming bitter.
Remove tea bags and add sugar - the tea will be extra sweet at this point. Add ice water and cubes to cool it to room temp.
Extract juice form orange and lemon into a serving jug. Add cooled tea and adjust sweetness before adding more ice cubes and lemon/orange slices for garnish.

*It is important to bring tea to at least room temperature before adding citrus juices or your iced tea will be cloudy.

Pour into tall chilled glasses and enjoy on a hot summer day!

This is a muslim speciality and usually served in between meals. You may need to reduce the rose syrup content to 1 tbsp if you are used to less sweetness.


Serves 1.

Ingredients
1 Scoop Vanila ice cream
1 1/2 tbsp Rose flavoured syrup
1 1/2 cups milk
1/8 tsp Kasa-kasa (optional)
2 tbsp hard set Jelly (Jello) (optional)
1 tbsp cooked Vermicelli (optional)

7 Cups water
2 onions,
2 carrots or radishes
2 celerey sticks,
handful coriander leaves
1/2 cup Tuvaru Parripu washed,
handful dried
mushrooms (oriental type)
handful Dried seaweed
like Japanese Hijiki,
Wakame, Arame etc,
1 tsp crshed Peppercorns,
1" sliced ginger.


Directions; Boil water, add chopped vegetable
and all the other ingrediants. Skim then cook
covered for 1 hour. Strain well and use as 


flavoury base for Rasams instead of plain dal water.

Strawberry Banana Smoothie

Strawberry Banana Smoothie









1 banana sliced
1 cup strawberries sliced
3 ice cubes
1/2 cup milk
1. Slice banana and strawberries and place in freezer for at least 1 hour
2. Remove from freezer and put all fruit into blender
3. Add 2-3 ice cubes for thickness
4. Add milk to your desired thickness
5. Add sugar if needed
6. Blend until smooth
Pour into glass and enjoy!
This can be made with any fruit.

1 prepared banana flower
1 cup of raw shrimp
1 can or 14 ozs thick coconut milk
1 ½ inch piece ginger peeled and grated
1 stalk of lemongrass, or 1 tblsp sliced
¼ tsp tumeric
½ tsp garam masala
2 fresh green chillies, or dried red chillies to taste
salt and black pepper to taste
oil for cooking
water

Description
Ginger is one of the main ingredients in an Ayurvedic diet. It is used in most recipes and known for its incredible abilities to help stimulate our digestion. It is a Sattvic spice and is known in Ayurveda as "universal medicine".

Dry ginger is hotter than fresh. It is a great stimulant and expectorant for reducing Kapha and increasing Agni. Fresh ginger is a better diaphoretic, better for colds, coughs, and nausea. Ginger is also great for arthritic conditions and is a tonic to the heart. It relieves gas, belching and cramps in the abdomen including Vata type menstrual cramps. Externally, this is a great paste for pain and headaches.

Pineapple Drinks

Pineapple Drinks





1 fully ripe pineapple
1 can evaporated milk
1/2 cup sugar
2 -3 tsp vanilla essence
4-5 cups ice cubes (if you prefer less sweet you can add more ice)

Peel and cut up pineapple into cubes. Put into a blender.
Add evaporated milk, sugar and Ice cubes and blend it. Add vanilla last and blend in. Pouring into a glass container then Put in refrigerator for a while (about 30 minutes) serve cold.

4-5 Shoe Flower (see picture)
2 Limes, squeezed
Sugar to taste
Add shoe flowers to 4 cups of boiling water. Turn off heat and let stand for 15 minutes. Strain the flowers, add lime juice and sugar to the water. Serve chilled.

Komadu (Watermelon) Drink



















Komadu (Watermelon) Drink


Serves 3
4.5 cups of watermelon flesh cut into chunks and de-seeded
1-2 cups cold water
Juice of a half a lime
Sugar and Salt to taste
Put all the ingredients in a blender and blend till all the watermelon has liquefied. Adjust salt and sugar. Serve with ice.
Note: It is much easier if you use seedless watermelon.

Ginger Drink

Ingredients

3 ozs. Root ginger
4 ozs. lime juice
1 1/2 - 2 lbs. sugar
6 bottles of water



Method:
Boil water, add pureed (crushed) ginger and sugar. When sugar gets dissolved, take it off the fire. Allow it to cool and add lime juice. Strain and bottle. Tastes better when it is iced.
This is an ideal Summer drink, when you are thirsty and tired. Enjoy!!!

Ingredients

3 lbs of Pumpkin - peeled & diced or try canned pumpkin
2 table spoons of butter or olive oil
2 onions chopped finely
4 Garlic Cloves
1 inch piece of Ginger
1 teaspoon of un-roasted curry powder (made from coriander, Sweet Cumin & Fennel seeds)
1/4 teaspoon of nutmeg
1/4 teaspoon of cinnamon
1 can of chicken stock or 10 cubes of chicken cubes OR Vegetable stock
1 teaspoon of Sugar
1/4 teaspoon of Black pepper
1/2 a cup of coconut milk OR 1 cup of full Cream milk
4 Cups of Water
Salt to taste if only needed

Rasam

Rasam






Ingredients
4 cups water
1/4 cup masoor dhal
1 tsp corriander seeds
1 tsp cumin seeds
2 dried red chillies
6-8 curry leaves
1 tbsp tamarind concentrate
1 tsp salt
1/2 tsp chillie powder
1 tbsp cooking oil
1/2 balck mustrad seeds



Method
Wash and drain the dhal. Place the water, dhal, corriander,
cumin, chillies and curry leaves in a pan and bring to boil.
Lower the heat to medium and cook, uncovered, for 6-8 mins.
Cover the pan and simmer for 30 mins.

Remove the pan from the heat and let cool slightly. Strain the
liquid and sieve the dhal into it. Return to the pan. Heat and
add the tamarind, salt, chillie powder. Stir until the tamrind
is dissolved.

Heat the oil in a seperate pan and add the mustrad seeds. As
soon as the seeds crackle, add the rasam or stir the hot oi and
the seeds in to the rasam.

Remove from heat and serve warm.

Polpala (Aerva lanata) is dried and preserved and used to make herbal tea. In Sanskrit it is Pashanabhedi and in Tamil it is known as Tengappu keerei.
